Thought I’d share another easy meal!
A mixture of your favorite Dark Leafy Greens, I used Organic Girl- Super Greens
1/4 – 1/2 cup Black Beans per person
Red Bell Pepper, and or Green and Yellow
1/2 Avocado per person
Sliced Portobello Mushroom
Sweet Onion, use however much you like!
1/2 cup to 1 cup of Yellow Corn ( Frozen or Fresh Corn on the Cob)
2 TBs of Your favorite Hummus
Lime and or Lemon
Olive Oil for dressing
Salt and Pepper to taste
Your Favorite Salsa
1. Heat Oven to 400
2. Prepare, slice, and/or wash, Peppers, Corn, Onion, and Mushrooms. Place on a baking sheet with about a tsp of Coconut Oil and bake in the oven for about 20 minutes. Be sure to stir every five to ten minutes, it is finished when onions are soft, and corn has browned.
3. Just throw everything together and enjoy! For dressing I simply pour a little olive oil over the salad, add freshly squeezed lime and or lemon juice. A tiny bit of salt and pepper to taste. Top with the hummus, and your favorite salsa if you want.
